Recipe Ingredients for Tilapia and Summer Vegetable Packets

10 ea. Raw Tomato Cherry
1 cup, sliced Squash, Summer, Crookneck And Straightneck
1 cup chopped Red Onion
12 10 beans (4" long) Beans, Snap, Green
4 tbsp Olives, Ripe, Canned (Small-extra Large)
2 tbsp Lemon Juice, Canned Or Bottled
1 oz Oregano
1 tbsp Extra Virgin Olive Oil
0.33 tbsp, drained Capers, Canned
0.5 tsp Salt, Table
0.5 tsp Pepper, Black
16 oz Tilapia Fillets

Recipe Directions for Tilapia and Summer Vegetable Packets

  1. Microwave green beans briefly to start cooking.

  2. Combine everything except fish in a large bowl.

  3. Layer 2 20" pieces of foil for each packet. Spray with nonstick spray.

  4. Place portion of tilapia in center of foil; sprinkle with salt and pepper if desired.

  5. Top fish with 3/4 C of vegetable mixture.

  6. Form packets, leaving room for steam to gather.

  7. Bake directly on oven rack. 425 degrees, 20 minutes.
