Adapted from Rachael Ray's shrimp stuffed Avocado

Recipe Ingredients for Tilapia stuffed Avocado

1/2 cup extra-virgin olive oil
2 cloves garlic, thinly sliced
1 teaspoon crushed red pepper
1 teaspoon Paprika
1 pound tilapia
1 Salt
2 tablespoons chopped flat-leaf parsley
1 avocado
1/2 c corn

Recipe Directions for Tilapia stuffed Avocado

  1. heat olive oil, saute garlic, add fish and season until cooked through

  2. chop up tilapia, combine with cooked corn, sprinkle with lime juice and cilantro if on hand

  3. cut avcoado in half, remove seed and stuff
