Recipe Ingredients for Tilapia with Sauteed Spinach

1 Egg, beaten
1/2 c. Dry Bread Crumbs
1 tsp. Italian Seasoning
3/4 tsp. Salt, divided
1/4 tsp. Garlic Powder
1/4 tsp. Paprika
24 oz. of Tilapia Fillets
4 tbsp. Olive Oil, divided
1 small Onion
1 Garlic Clove, minced
5 c. fresh Baby Spinach
1/8 tsp. crushed Red Pepper Flakes
1/8 tsp. Black Pepper
1/4 c. chopped Walnuts, toasted

Recipe Directions for Tilapia with Sauteed Spinach

  1. Place egg in a shallow bowl.

  2. In another shallow bowl, combine the bread crumbs, Italian seasoning, 1/2 teaspoon salt, garlic powder and paprika.

  3. Dip fillets in the egg, then bread crumb mixture.

  4. In a large skillet, cook fillets in 3 tablespoons oil over medium heat for 4-5 minutes on each side or until golden brown and fish flakes easily with a fork.

  5. Remove and keep warm.

  6. In the same skillet, saute onion in remaining oil until tender.

  7. Add garlic; cook 1 minute longer.

  8. Stir in the spinach, pepper flakes, pepper and remaining salt.

  9. Cook and stir for 3-4 minutes or until spinach is wilted.

  10. Serve with fillets; sprinkle with walnuts.
