Tilapia in tomato sauce with green beans

Recipe Ingredients for Tilapia Greco

12 ounces tilapia
15 ounces chopped tomatoes
1 onion, cut in half and sliced
2 cups green beans, frozen
1 tsp salt
1/2 tsp black pepper
1 tsp thyme
1 tsp oregano
1 tsp basil
2 tbsp olive oil
2 cups mushrooms, sliced
1 cup tomato sauce

Recipe Directions for Tilapia Greco

saute sliced onions in olive oil in a large non-stick skillet until they soften, add mushrooms and continue to saute, after several minutes add frozen green beans and saute. Cover on medium heat for 5-6 minutes. Add chopped tomatoes and seasonings (I use Pomi tomatoes in the tetrapack - no BPA - if using fresh adjust cooking time). cover and cook through. Add tomato sauce (whatever jarred pasta sauce - I like Classico) cook through. When the vegetables look almost ready to eat, add tilapia filets - using a large spatula, move vegetable mixture over and put filets on the pan, cover over with the veg mixture and do this so that all three filets are under the vegs. Cover for about 6 - 10 minutes and voila.
