A nice change from just plain fish.

Recipe Ingredients for Tilapia Filets

454 g Tilapia filets
1 tbsp basil pesto
1 plum tomato
1 green onion
1/2 tsp garlic
1 Splenda packet
1 tbsp red wine vinegar
1 tbsp Parmesan, grated

Recipe Directions for Tilapia Filets

  1. Spray a shallow baking dish with non-stick spray.

  2. Place filets in baking dish.

  3. Spread pesto over filets - lightly covering all of the surface.

  4. In a seperate bowl combine: plum tomatoes, garlic, Splenda, vinegar.

  5. Mix well and spoon over filets.

  6. Top with Parmesan cheese.

  7. Bake in the oven at 350 degrees for about 10 to 15 mins (depending on the thickness of the filets).

  8. Goes well with rice and steamed broccoli.
