Recipe Ingredients for Tilapia in Articoke & Tomato Sauce

1 tablespoon olive oil
16 ounce tilapia fillets
1/4 teaspoon salt, plus more for seasoning fish
1/4 teaspoon freshly ground black pepper, plus more for seasoning fish
1 onion, sliced into thin rounds
2 cloves garlic, minced
1/2 pound artichokes, frozen & thawed
1/2 cup apple juice
1 tablespoon vinegar, balsamic
1 1/2 cups tomato juice, low-sodium(or low-sodium v8)
14 1/2 ounce diced tomatoes
1/2 teaspoon minced fresh thyme leaves

Recipe Directions for Tilapia in Articoke & Tomato Sauce

  1. Preheat the oven to 400 F. Spray olive oil over the tilapia on both sides and season with salt and pepper. Heat a no-stick grill pan over high heat. Sear the fish on both sides, about 1 minute per side, depending on thickness.

  2. In a medium saucepan, heat the 1 tablespoon of olive oil over medium-high heat. Add the onion and cook for 1 minute. Add the garlic and artichokes and cook until golden brown, about 5 minutes. Add the apple juice & vinegar and stir, scraping the brown bits off the bottom of the pan with a wooden spoon. Add the tomato juice (or V8 juice), tomatoes and juice, thyme, and 1/4 teaspoon each salt and pepper. Bring to a simmer.

  3. Place the tilapia on a baking dish. Ladle the artichoke and tomato broth over the fish and bake 20 minutes.
