A quick and simple recipe that always pleases! Note that the portion size is about half of what it should be. I eat small portions because of GB surgery, so you should double it for a 'real world' portion size. My husband requests this on a regular basis, and my 13-year-old stepson just loves it (the 6-year-old is less enthused, but will eat it willingly).

Recipe Ingredients for Tilapia al Orno

16 oz Tilapia Fillets
2 tbsp Olive oil
1/2 onion
2 garlic cloves
2 tbsp tomato sauce
1 tbsp capers
1 cup white wine
2 tbsp lemon juice

Recipe Directions for Tilapia al Orno

  1. Cut the tilapia fillets in half, length-wise. This step is optional - it just makes serving easier.

  2. Slice the onions, and chop or mince the garlic.

  3. Saute the onions in the oil over medium heat for about 3 minutes in a large oven-proof frying pan.

  4. Add the garlic, and continue cooking until the onion and garlic are translucent.

  5. Add the wine, lemon juice and tomato sauce, and let it simmer about 5 minutes. In the meantime, preheat the broiler.

  6. Move all the stuff in the pan to one side, add the tilapia fillets to the pan, then cover the fillets with the stuff.

  7. Sprinkle capers over the fillets, and put the pan under the broiler for 5 minutes.

  8. Check to make sure the fish has cooked through before serving.

  9. Serve with rice, cous cous, or just enjoy with some veggies
