Recipe Ingredients for Thyme-Scented Wild Mushroom Bisque

2 tbsp Olive Oil
2 medium raw Leeks
4 tbsp chopped Shallots
1 stalk, large (11"-12" long) Celery
2 clove Garlic
1 tsp Salt, Table
2 oz Wine
8 oz Baby Bella Mushrooms Packaged
4 oz Mushroom, Oyster
4 oz Mushrooms, Portabella
5 pieces Dried Porcini Mushrooms
6 cup Organic Vegetable Broth
4 oz Extra Soft Tofu
0.5 Teaspoon Thyme

Recipe Directions for Thyme-Scented Wild Mushroom Bisque

  1. Soak the porcinis (1 cup dried) in very hot water, covered, for 20 minutes, then drain them.

  2. Heat the olive oil in a large pot over medium heat. Add the leeks, shallots, and celery. Cover and cook until softened, about ten minutes. Add the garlic, salt and thyme and cook for two minutes. Add the white wine, increase the the heat, and cook for about two minutes to decrease the liquid slightly. Add all the fresh mushrooms, reduce the heat to medium, and cook for five minutes, stirring occasionally.

  3. Slice the porcinis and add to the pot along with the vegetable stock (or mushroom stock, if you can find it). Reduce heat to medium-low and simmer for twenty to thirty minutes. Taste and add more salt as desired.

  4. Carefully transfer the soup, a cup or so at a time, depending on the capacity of your food processor or blender, to either appliance and puree. Return to the saucepan and place over low heat to keep warm until ready to serve, being careful not to boil.
