Thyme Lemon Chicken Recipe

A citrusy recipe that is simply to make and very tasty. This recipe was adapted from the recipe in "The Complete Mexican, South American, and Caribbean Cookbook"

Recipe Ingredients for Thyme Lemon Chicken

4 Chicken Breast
3 tbsp Chopped spring Onion
2 tsp Fresh Thyme or 1 tsp Dried Thyme
2 Garlic Cloves
3 tbsp Lemon Juice
4 tsp Butter
1 Salt
1 Ground Black Pepper

Recipe Directions for Thyme Lemon Chicken

  1. Evenly coat chicken breast with salt and pepper.

  2. Put chicken breast in baking dish or roasting pan and using a sharp knife make a lengthways slit along breast. Mix the spring onion with a salt and pepper and press the mixture into the slits.

  3. Mix the thyme, garlic and lemon juice in a small bowl. Add 4 tsp of the butter and mix well, then spoon a little of the mixture over each chicken breast, spreading evenly.

  4. Spoon the remaining butter evenly over the top of the chicken pieces. Cover the dish tightly with clear film and leave to marinate for at least 3-4 hours in the refrigerator. (It is not necessary to marinate but it does taste better)

  5. Preheat the oven to 375 degrees Farenheit. Remove the film and cover the chicken with foil. Bake for 40 minutes (give or take depending on thickness of Breast and amount) Remove the foil and cook for another 5-10 minutes until chicken turns golden brown.
