These are really delicious pancakes, low calorie and thrifty! I was very happy to find a similar recipe and adapt it for our family, in order to use leftover cooked oatmeal. :)

Recipe Ingredients for Thrifty "Leftover Oatmeal" Pancakes

2 cups unbleached flour
1 cup fructose
4 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup cooked oatmeal
2 cups water
1 teaspoon molasses
1/2 cup safflower oil

  1. stir all dry ingredients together

  2. mix wet ingredients in separate bowl

  3. stir all ingredients together

  4. cook as pancakes
