Three-Pepper Fettuccini Recipe

You can roast peppers on a foil lined baking sheet under a broiler. Turn occasionally, until completely charred. Place in a bowl and cover with plastic wrap for 10 mintues. Remove the charred skins.

Recipe Ingredients for Three-Pepper Fettuccini

2 sweet peppers, one yellow and one red, roasted
1 jalapeno pepper, roasted
1 tablespoon olive oil
1/4 tsp dried thyme,
9 ounces fettuccine
4 ounces goat cheese
2 tablespoons chives, minced

Recipe Directions for Three-Pepper Fettuccini

  1. Core and seed roasted bell peppers, and cut into thin strips. Core and seed jalapeno and mince. Add all peppers to a bowl. Stir in oil and thyme. Season with salt and black pepper.

  2. Cook fettuccini according to package. Drain well, toss with peppers and cheese. Sprinkle chives on top. Serve.
