A relief from plain rice. Inspired by a delicious three-grain salad in Stephan Pyles' "Southwestern Vegetarian."

Recipe Ingredients for Three-Grain Pilaf with Dried Fruit

1/2 cup barley, cooked
1/2 cup quinoa, cooked
1/2 cup wild rice, cooked
1/4 cup sliced almonds, toasted
2 tbsp dried apricots, chopped
2 tbsp raisins
1 tbsp fresh cilantro, chopped (optional)
1/2 tbsp fresh mint, chopped (optional)

Recipe Directions for Three-Grain Pilaf with Dried Fruit

Cook the grains. While they are still hot, toss them together with the other ingredients. Add salt and pepper to taste.
