Modified from this recipe (http://allrecipes.com/Recipe/Cheese-Lasagna/Detail.aspx). Healthier than the meat lasagna my family usually eats, and still really delicious. Feel free to change up the sauce with different spices or use a pre-packaged spaghetti sauce. Note: I usually end up with one 8x11 and one 5x7 lasagna, but that's just because I don't like the monstrous 9x13 pans.

Recipe Ingredients for Three-Cheese Lasagna

16 oz lasagna noodles
2 cups ricotta cheese
1/2 cup Parmesan cheese, grated
2 eggs
1 teaspoon olive oil
2 1/3 cups mozzarella cheese, shredded (divided)
30 oz tomato sauce
1 tablespoon olive oil
3 tablespoons brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried parsley
1/2 teaspoon paprika
1/2 teaspoon onion powder
1 onions, chopped
1 clove garlic, large

Recipe Directions for Three-Cheese Lasagna

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 10-20 minutes or until al dente; drain and lay lasagna flat on foil to cool.

  3. Stir ingredients for sauce (tomato sauce, olive oil, brown sugar, garlic powder, oregano, basil, parsley, paprika, onion powder) in a medium saucepan and simmer for 15-20 minutes. (You can do this while the water for your noodles is boiling.)

  4. In a medium saucepan, heat oil over medium heat and saute garlic and chopped onion for 2 minutes; stir in spaghetti sauce.

  5. In a medium bowl, combine ricotta, Parmesan, 1 1/3 cups mozzarella, and eggs; mix well.

  6. Cover bottom of a 9x13 baking dish with a layer of noodles. Spread 1/2 cup of sauce over the noodles. Cover with a 1/2-1 inch layer of ricotta mixture.

  7. Add another layer of noodles, then more sauce and ricotta. Repeat until done. (If you run out of room, use the remaining ingredients in a smaller, ~5x7 inch baking pan.)

  8. Top with remaining noodles and sauce and sprinkle remaining mozzarella over all.

  9. Bake 45 minutes, or until cheese is bubbly and top is golden.
