Very tasty and easy alternative to stuffed shells or laborious lasagna. Quite high in calories though. Lots of alternatives to make it lower calories without compromising taste.

Recipe Ingredients for Three Cheese Easy Manicotti

1 lb. ground beef
2 cups water
12 oz tomato paste
1 1/2 tsp dried oregano
15 oz ricotta cheese
8 oz mozzarella cheese
1/2 cup parmesan cheese
1 egg
12 oz pasta

Recipe Directions for Three Cheese Easy Manicotti

  1. In a large skillet, cook beef & onion over medium heat until the meat is no longer pink; drain. Stir in the water, tomato paste, bouillon and oregano. Cover & simmer for 3 minutes.

  2. Cook pasta according to package directions to al dente.

  3. Meanwhile, in a large bowl, combine the ricotta cheese, 1 cup mozzarella. Parmesan cheese and egg. Add cooked pasta & mix being careful not to tear pasta.

  4. Pour pasta & cheese mixture into a 9 x 14 casserole baking dish. Spoon meat sauce over shells. Cover and bake at 350◦ for 30 minutes. Uncover and sprinkle remaining mozzarella cheese. Bake 3-5 minutes longer until the cheese is melted.

  5. Serve immediately with crusty bread.
