Makes 8 servings



Serving size = 1 1/2 Cup. Based on recipe from Cooking Light (Dec. 2006), but egg white is gone and bok choy is added. Also just one can of tomatoes instead of two.

Recipe Ingredients for Three Cheese Baked Pasta

1 tablespoon Olive Oil
1 1/4 cup onion, diced
1/3 cup carrot, diced
1/4 cup celery, diced
3 cloves garlic, minced
3/4 cup baby bok choy, diced
1/2 cup sun-dried tomatoes, chopped
1 1/4 teaspoon fresh thyme
1/2 teaspoon Kosher salt
1/4 teaspoon red pepper flakes
28 oz canned tomatoes, diced
1 1/2 c parmasan cheese, grated
1 cup part skim ricotta cheese
1 pound rigatoni
1/4 teaspoon ground pepper
4 oz provolone cheese, diced

Recipe Directions for Three Cheese Baked Pasta

  1. Saute veges (through celery) 10 minutes in oil.

  2. Add garlic and saute another minute.

  3. Add sundried tomatoes, thyme, pepper flakes and cook one mcanned tomatoes (do not drain). Cook until slightly thickened, about 25 minutes. Add salt along the way (if desired).

  4. Meanwhile, cook the pasta.

  5. And meanwhile, in a large bowl, combine 1 cup of the grated cheese with the Ricotta. Add a little ground pepper to the bowl.

  6. When pasta is almost done, drain it and stir it into the cheeses. Then add the vegetables and diced provolone.

  7. Put in 9 x 13 pan, sprinkle remaining 1/2 Cup parm cheese on top.

  8. Bake in 400 degree oven 25 minutes or so.

  9. Or separate into two square pans, cook one 20 minutes and freeze the other.
