Recipe Ingredients for Three-Bean and Wild Rice Casserole

1 tbsp vegetable oil
4 medium carrots, peeled and sliced
1 large onion, sliced
3/4 tsp salt
1 can cream of mushroom soup
3 1/4 cups water
1 1/2 cups wild rice
17 oz kidney beans
17 oz. Great Northern beans
10 oz frozen lima beans

Recipe Directions for Three-Bean and Wild Rice Casserole

  1. Preheat oven to 400.

  2. In 12-inch skillet, heat oil over medium-high heat. Add carrots, onion, and salt, and cook until golden.

  3. Meanwhile, in a 2 quart saucepan over medium-high heat, heat soup and water to boiling.

  4. In 2.5-quart casserole, stir carrot mixture, diluted soup, and rice. Cover and bake for 1 hour.

  5. Drain beans and stir them and lima beans into casserole. Cover and bake 20 minutes. Stir before serving.
