Recipe Ingredients for Three Bean Vegetarian Chili

2 T extra virgin olive oil
1 c carrots, chooped
1 c celery, chopped
1 c yellow onion, diced
3 cloves garlic
2 c low sodium vegetable broth
8 oz tomato sauce
28 oz can diced tomatoes, drained
1 3/4 c red kidney beans (15.5oz can), drained
1 3/4 c pinto beans (15.5 oz can), drained
1 3/4 c garbanzo beans (chickpeas- 15.5 oz can), drained

Recipe Directions for Three Bean Vegetarian Chili

  1. Heat olive oil in large saucepot over medium heat for 1 minute. Add carrots, celery, onion, and garlic. Saute 8-9 minutes, stirring occasionally.

  2. Stir in vegetable broth, tomatoes, tomatoe sauce, beans, and seasonings.

  3. Cover; cook for 30 minutes over low heat, stirring occasionally.

  4. Serve.
