Recipe Ingredients for Three Bean Stew

20 3/10 grams Olive Oil
4 serving Peas Black-Eyed
2 cup, chopped Carrots
136 grams Lima Beans
1 cup Organics Red Kidney Beans Dry
2 cup, sliced Onions
300 grams Yam
2 cup, cubes Rutabagas
6 clove Garlic
2 tsp Ginger Root

Recipe Directions for Three Bean Stew

  1. Soak beans in water overnight. Discard water, cook in dutch oven/large pot for 45 minutes - 1 hr. When done, drain water from beans, put beans aside.

  2. Add olive oil to bottom of pan, saute onion and garlic until translucent, add rest of vegetables and cook for 5 minutes. Add 4 cups of water, 4 cups of low sodium veggie stock and beans, simmer for 30-45 minutes.
