Soup made from three types of beans

Recipe Ingredients for Three Bean Soup

1 T vegetable oil
2 medium onions, chopped
1 Salt and pepper to taste
1 dash chili powder
1 dash cumin
1 tsp dried thyme
30 oz white beans, rinsed and drained
15 oz kidney beans, rinsed and drained
15 oz pinto beans, rinsed and drained
2 c low-sodium chicken or vegetable broth
3/4 c grated cheddar cheese
1/4 c finely chopped scallions, optional

Recipe Directions for Three Bean Soup

  1. In a large pot, heat oil over medium-low heat. Add onions; cook 5 minutes, stirring occasionally. Stir in salt, pepper, chili powder, cumin, and thyme; cook 1 minute. Add beans, stir well, and cook 1 minute.

  2. Raise heat to high; add the broth. Bring to a boil, reduce heat to low, cover, and let cook 10 minutes.

  3. Working in batches, puree the soup in a food processor or blender until smooth and thick. Simmer over low heat. Season to taste. Serve hot, sprinkled with grated cheese, scallions and hot pepper sauce, if desired.
