Recipe Ingredients for Three-Bean Soup

1 cup dried pinto beans
1 cup dried kidney beans
1 cup dried white beans
2 tbsp olive oil
2 yellow onions, finely chopped
2 celery stalks, finely chopped
2 carrots, peeled and finely chopped
14 1/2 ounces tomatoes, diced with juice
8 cups chicken stock
2 cups water
1/2 cup flat-leaf Italian parsley, finely chopped, in sections
4 cloves garlic, minced, in sections
1 salt
1 pepper

Recipe Directions for Three-Bean Soup

  1. Combine rinsed beans in large pot and soak in water overnight.

  2. Warm oil in soup pot over medium-high heat and saute onions until softened.

  3. Add celery and carrots and saute until barely softened.

  4. Add drained beans, tomatoes and juice, stock, water, 1/4 c parsley, 2 cloves garlic, and 1 bay leaf.

  5. Cover and boil. Reduce heat and simmer on low until beans are tender, about 1 hour.

  6. Remove from heat and discard bay leaf.

  7. Transfer half of soup to blender and puree.

  8. Return puree to pot.

  9. Reheat and season with salt and pepper.

  10. Season with Gremolata to serve:

  11. Combine 2 cloves garlic, 1/4 cup parsley, and finely chopped zest of one lemon
