Recipe Ingredients for Three bean salad with fresh herbs

1 cup black beans, cooked
1 cup kidney beans, cooked
1 cup garbanzo beans, cooked
2 tbsp olive oil
1 tsp lemon juice
1 tsp red wine vinegar
1 tbsp yellow mustard
1/2 small red onion, finely diced
1 tsp fresh rosemary, chopped
1 tsp fresh basil, chopped
1 tsp fresh oregano, chopped

Recipe Directions for Three bean salad with fresh herbs

  1. Cook beans and run under cold water until cooled.

  2. Whisk together olive oil, vinegar, mustard, lemon juice, onion, and herbs to make vinagrette.

  3. Combine beans and vinagrette and serve over lettuce.

  4. (I find that the beans become more flavorful if you let the salad sit in the refrigerator overnight.)
