Recipe Ingredients for Three Bean Pilaf

1 medium (2-1/2" dia) Onions
2 cup Quinoa
4 cup Organic Vegetable Broth
1.75 cup Beans, Kidney, All Types, Mature Seeds, Canned
2 cup Garbanzo Beans (Chick Peas), Organic
1.75 cup Black Beans
1.75 cup Stewed Tomatoes, No Salt Added
4 oz Old El Paso Chiles Green Chopped
2 cup Corn, Sweet, Yellow

Recipe Directions for Three Bean Pilaf

Spray large pot, add onion and cook to soften. Add quinoa (or brown rice), vegetable broth, beans(drained and rinsed), and tomatoes. Bring to boil, reduce heat, cover and simmer 20-30 min. Stir in chilis and corn. Cover and cook 15 min. Let rest 15 min before servig.
