Three Bean Enchiladas. Main Meal

Recipe Ingredients for Three Bean Echiladas

2 tablespoons olive oil
2 large onions - raw
800 g tomatoes - chopped
2 teaspoons chili powder
2 peppers, sweet, red - raw
240 g beans - kidney, red, canned
235 g beans - cannellini, canned
240 g beans - pinto - mature seeds, canned
300 g corn tortillas
4 oz cheddar cheese

Recipe Directions for Three Bean Echiladas

  1. Heat the olive oil and soften the sliced onions

  2. Add the chilli powder and cook for a couple of minutes

  3. Add the tinned chopped tomatoes and sliced red peppers

  4. Bring to the boil and simmer for twenty minutes

  5. Add the three tins of beans (drained) and warm through

  6. Pour the mixture into a colander

  7. Split the drained bean mixture between eight soft corn tortillas (warmed)

  8. Roll up and place in a large dish

  9. Pour over the drained juices

  10. Sprinkle with the cheddar cheese

  11. Bake in the oven for 15 minutes
