Three-Bean, Avocado and Charred Corn Salad with Lime Dressing from The Complete Light Kitchen by Rose Reisman, p106. This recipe can be made with lime zest and juice, or lemon zest and juice. "This salad has nutrition galore and makes a great side salad or buffet dish. Often I'll add some grilled chicken or fish and make it a main meal. Cut the avocado just before serving, or add some lemon juice to it to prevent discoloration."

8 oz Green Beans
1 cup Corn, Sweet, Yellow
1 cup Black Beans
2 serving Primo Chick Peas (Garbanzo Beans)
0.75 cup, chopped Peppers, Sweet, Red
0.5 cup, chopped Onions
0.5 cup, cubes Avocados
1.5 tsp Lemon Peel
0.19 cup Lemon Juice
2 tbsp Olive Oil
1 tsp Garlic
1 tsp Ginger Root
0.5 tsp Franks RedHot Hot Sauce
3 dash Salt, Table
3 dash Pepper, Black
0.33 cup Parsley

Recipe Directions for Three-Bean, Avocado and Charred Corn Salad with Lime Dressing (The Complete Light Kitchen)

  1. Steam the green beans just until bright green and still crisp, about 3 minutes. Place immediately under cold water and rinse until the beans are no longer warm. Place in a serving bowl.

  2. Spray a small non-stick skillet with cooking oil and place over medium heat. Sauté the corn, stirring frequently, until browned, approximately 8 minutes. Add to the serving bowl, along with the rinsed black beans and chickpeas, diced bell pepper, diced red onion, and diced ripe avocado.

  3. Whisk the zest, juice, oil, garlic, ginger, hot sauce (or 1 tsp minced jalapeno), salt and pepper together in a small bowl.

  4. Pour the dressing over the salad and toss to mix well. Garnish with the chopped fresh parsley, cilantro, or basil.
