Recipe Ingredients for Thirty Minute Loaf

6 1/2 cups all purpose flour
1 cup milk
1 cup water
2 1/2 tbsp butter
3 tsp salt
3 tbsp sugar
4 1/2 tsp active dry yeast

Recipe Directions for Thirty Minute Loaf

  1. Warm the milk and butter in a small saucepan on medium low for a few minutes. Dissolve salt and sugar in it. You do not have to completely melt the butter. Pour in lukewarm water (I've found an easy way to reach this temp is by microwaving the water for 1 minute or so).

  2. In a large bowl stir together yeast with two cups of flour. Pour in the liquid and stir together to form a batter.

  3. Beat the batter for 2 minutes with a wooden spoon - vigorously! It should be soupy and mostly lump-free. Stir in 2 more cups of flour, and beat for another 2 minutes the same way. This one will be harder to beat and you should see ribbons in your batter.

  4. Add the remaining 2 cups of flour and form the dough into a workable mass. You may use your hands at this point. Turn the dough to a clean floured surface and knead with a strong push turn fold method for at least 8 minutes. See the above quote by Bernard Clayton about slapping your dough ball around. If it sticks sprinkle more flour on. I used another 1/2 cup of flour for kneading.

  5. Divide the dough in 2 balls and let them rest on the counter for 5 minutes under a towel. While they're relaxing, lightly grease 2 loaf pans.

  6. To shape the dough, roll each ball into an oval that is roughly the length of the loaf pan. Fold it in half (longways) and pinch the seam together, like a big taco. Tuck the ends under. Place the loaves seam down in the pan, and brush with melted butter.

  7. Place the pans in a cold oven and turn the heat to 400F. After 60 seconds (no more, no less) turn the heat off. Let the dough sit in there for 30 minutes or so. Turn the oven back on to 400F, and bake for about 30 minutes until loaves are brown and sound hollow when rapped on the rump.
