Yummy curry or soup! Tastes great over jasmine or basmati rice.

Recipe Ingredients for Thinlandia-Tomato-Lentil-Spinach-Curry

315 g potato
200 g lentils
150 g onion
75 g carrots
35 ounce diced tomatoes, no added salt (actually 28, 2 cans NS)
1 T olive oil (I used avocado)
1/2 t salt
1 T coriander
1 T cumin
1/2 t chili powder
70 g spinach
1/2 t salt (1 T LS chicken season, 45 cal. 2 t LS Costco seasoning. 1 t McKay's chick seasoning)
1 3/8 cups nonfat yogurt (actually 2 cups)

Recipe Directions for Thinlandia-Tomato-Lentil-Spinach-Curry

  1. Cook lentils, carrots, and 1/4 - 1/2 cup diced onions with appropriate amount of water in a medium saucepan. Add McKay's chicken style seasoning or flavorings of choice. Cook until the lentils are soft.

  2. In a separate small saucepan, boil sliced potatoes.

  3. In a large frying pan or Dutch oven type pan, heat oil to medium heat.

  4. Add garlic and the cup of diced onion. Saute' for about seven minutes.

  5. Add coriander, cumin, chili powder, cayenne pepper, and salt/season salt, and cook for about a minute, stirring frequently.

  6. Add diced tomatoes to mixture and heat through.

  7. Add , spinach, lentils, and sliced potatoes.

  8. After curry has heated through, add 2 cups of nonfat yogurt and stir thoroughly.

  9. If desired, use a wand blender to blend it up a bit, leaving some chunks for texture.

  10. Eat and enjoy. :)

  11. Could easily be used as a soup, and also tastes great over jasmine or basmati rice!

  12. For those who weigh their foods and/or count calories, this ended up being 0.6 calories per gram of curry.
