Wonderful granola bars! Fills a whole sheet pan lined with parchment paper; I cut it into 15 pieces lengthwise and 3 crosswise, making 45 nicely-sized bars.

Recipe Ingredients for Thinlandia-Peanut-butter-flax-bars

4 T almond meal
1 cup flax meal (16 T)
1/2 cup flax meal (actually Salba)
3 cup puffed rice (actually 1 1/2 cup Erowhon puffed rice)
3/4 cup oatmeal
1/4 cup wheat bran
3 scoop protein powder (actually 4 heaping scoops)
52 g chocolate chips (actually 56 g mini - 4 heaping T)
1 oz peanuts, chopped (1 oz)
1 oz pretzels, chopped
2 t cinnamon (also 1 t Also Salt & 6 packets Truvia)
4 T rice syrup (brown rice syrup)
4 T honey (actually, agave)
60 g brown sugar (close to 7 T)
4 T coconut oil
1/4 cup peanut butter
1/4 cup water

Recipe Directions for Thinlandia-Peanut-butter-flax-bars

  1. Preheat oven to 305 degrees.

  2. Mix dry ingredients. (Brown sugar is considered a wet ingredient in this case.)

  3. Mix wet ingredients on stove.

  4. Mix wet and dry ingredients thoroughly.

  5. Pat into parchment paper-lined pan, mashing down as best you can with a measuring cup, spoon, hand, whatever.

  6. Score bars.

  7. Bake for approximately 23-25 minutes.

  8. Finish cutting immedicately, then put on wire rack to cool.
