This has everything good for you in it! It is crispy and wonderful. Use a 1/2 cup scoop to dish it onto the waffle maker. Do not use a Belgian waffle maker - that would make it impossible to cook the waffles as they are so hearty.

Recipe Ingredients for Thinlandia-Orange-Pecan-Multigrain-Waffle

1 7/8 c chick peas (actually, 1/2 cup dry chick peas)
1 1/2 c water
1 c orange juice
1 egg white
1 cup corn meal
1/2 c oatmeal
2 T wheat bran
2 T flax meal (I used Salba)
1/3 c pecans, chopped (36 g)
1 T baking powder, no added salt (plus 2 packet sTruvia and zest of one orange)
1/4 t sea salt

Recipe Directions for Thinlandia-Orange-Pecan-Multigrain-Waffle

  1. The night before, soak 1/2 c garbanzos in water in the refrigerator.

  2. The next morning, drain garbanzos (chickpeas).

  3. Put juice and water and egg white in the blender first. Then add chick peas and blend until frothy. Add the rest of the ingredients and mix thoroughly. Your blender may be having trouble here. Do the best you can.

  4. Scoop batter onto preheated waffle maker. Using a 1/2 cup scoop, this made eight waffles for me. Cook until light goes off; for my waffle iron that took around 4:15 minutes. Do not open before that time.

  5. When finished, open, and remove waffle carefully. It should be very crispy.

  6. Enjoy with toppings of your choice!
