Recipe Ingredients for Thinlandia-Migas-faux-enchiladas

70 g corn tortillas (44 g tortilla crisps, made from 90 cal tortillas, sprayed with Pam and sprinkled with fajita seasoning, and bake
2 eggs
1/2 cup salsa, unsalted (about 150 g homemade salsa)
2 T fat free sour cream
28 g cheddar cheese

Recipe Directions for Thinlandia-Migas-faux-enchiladas

  1. Prepare the corn tortillas.

  2. Spray pan with butter-flavored Pam and heat to medium.

  3. Put salsa in pan; add some jalopenoes if desired.

  4. Fry/cook for a couple of minutes.

  5. Whisk the eggs; add pepper or seasoning.

  6. Drop tortilla strips into pan.

  7. Add eggs and start scrambling.

  8. Add in cheese and sour cream after eggs have scrambled.

  9. Yum! Homemade enchilada taste!
