Nice dip that can substitute for guacamole; lower fat. This made about 2 1/8 cups, or 17 1/8 cup (2T) servings.

Recipe Ingredients for Thinlandia-Edabroccomole

2 cups broccoli (used 2 servings of frozen, 60 cal)
9/16 cup edamame, frozen and shelled (1 cup, 220 cal)
2 T lemon juice (juice of 1/2 lemon about)
3 T lime juice (juice of one lime)
1 t minced garlic (and a few sprinkles also salt)
1 2/3 T olive oil (actually, avacado oil)
1 T jalapeno (about 7 slices from jar)
1/2 t red pepper (fresh hot pepper, in a tube)
1/4 cup water (or more)

Recipe Directions for Thinlandia-Edabroccomole

  1. Briefly cook edamame and broccoli in the microwave with a couple of tablespoons of water.

  2. Mix all ingredients in food processor and adjust to taste with black pepper, salt, etc.

  3. Chill.
