Lovely, almost like caramel, with little pops of tartness among the sweetness!

Recipe Ingredients for Thinlandia-Cranberry-Popcorn-WhiteChocolate-Cookies

1/4 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, softened
1/4 cup applesauce, unsweetened
1 cup brown sugar, firmly packed
1 egg
1 teaspoon vanilla extract
1 cup toasted wheat germ
1/2 cup oatmeal
1/2 cup flaked coconut (I used the amount that would add up to about 150 calories)
3 cups popped popcorn
1 1/2 cup cranberries, chopped (I used 120 g)
1/2 cup white chocolate chips

Recipe Directions for Thinlandia-Cranberry-Popcorn-WhiteChocolate-Cookies

  1. Preheat oven to about 340 degrees.

  2. Cream together butter and sugar, then add applesauce, egg, and vanilla.

  3. Add flour, wheat germ, oatmeal, etc. Add mix-ins. Mix thorougly.

  4. Bake for 13-15 minutes; takes a little longer because of the cranberries.
