Makes about 17 thin crepes; 1/4 cup batter per crepe.

Recipe Ingredients for Thinlandia-Buckwheat-Crepes

2 cups buckwheat flour
1 cup all purpose flour
2 egg whites (2 T egg replacer)
3 T lowfat yogurt (actually, 6 T yogurt whey - 25 cal)
2 eggs
1/2 t salt (and 1/4 t AS)
2 T honey
2 cups water
1/2 cup 2% milk

Recipe Directions for Thinlandia-Buckwheat-Crepes

  1. Mix ingredients with immersion blender. Let set in bowl in refrigerator for 30 minutes or more.

  2. Spraying pan with butter-flavored Pam with each crepe, cook for a few seconds on each side.

  3. Tastes great with a mushroom/spinach/chive/green onion/butter filling, with yogurt cheese and cheddar cheeses.
