Single serve, healthful blueberry pancake. I like to mix up three eggs, use 2 1/2 eggs for an omelet and use about half an egg in the pancake. Serve with 1/2 T butter (50 calories) and sweetener/cinnamon to taste.

Recipe Ingredients for Thinlandia-Blueberry-Pancake-for-1

1/4 cup flour
1 1/2 T milk (actually 1 T whole milk)
2 T egg (about 30 g)
1 T water
1/2 t baking powder
1 dash cinnamon (and most of a pack of Truvia)
1 dash salt
50 g blueberries

Recipe Directions for Thinlandia-Blueberry-Pancake-for-1

  1. Mix all the ingredients.

  2. Wash blueberries; add wet blueberries to batter.

  3. Cook into a pancake over low/moderate heat.
