I make 6 dark chocolate and 6 vanilla individual-sized cheesecakes. Instructions show 6, but it's easiest to make 12 at a time.

Recipe Ingredients for Thinlandcheesecakes

1/6 cup almond meal
1/2 cup oatmeal (ground up)
1 T maple syrup
1 T butter
1/4 t cinnamon (1/8 t Also Salt)
1/4 t vanilla
3 oz Neufchatel cheese
181 g silken tofu (1/2 package)
3 T sugar (plus 3 packets Stevia)
3/4 T cocoa (2 T dark cocoa; in normal version, 1 T flour, which adds 18 calories)
1/2 t vanilla

Recipe Directions for Thinlandcheesecakes

  1. Preheat oven to 325 degrees.

  2. Double the top group of ingredients down through vanilla.

  3. Grind up 1 cup of oatmeal. Add 1/3 cup Almond meal, cinnamon, and Also salt. Mix in food processor. Add 2 T of maple syrup, and 2 T of room-temperature butter. Mix well.

  4. Prepare 12 jumbo muffin tins with Butter-flavored Pam.

  5. Separate between tins, about 1 tablespoon of crust per tin. Pat out into crust, spraying fingers with Pam to ease in flattening crust. Finish by spraying the bottom of a glass with Pam and flattening even further.

  6. Bake for 10 minutes at 325 degrees.

  7. Take out of oven and let cool while preparing the cheesecake fillings.

  8. For vanilla version, which has about 3 calories per unit more:

  9. Put half of silken tofu, drained as much as possible, into food processor. Whiz for a few seconds until smooth. Add 3 oz Neufchatel cheese, 3 T sugar, 2 1/2 packets of Stevia sweetener, 1 T flour, and 1/2 t vanilla. Mix for a few seconds until smooth. Separate between six of the crusts, 1 1/2-2 T of batter per crust.

  10. For chocolate version:

  11. Mix other 1/2 of silken tofu. Add cheese, 2 T dark chocolate cocoa, 3 T sugar, and 3 packets Stevia sweetener. Mix. Separate between other six crusts.

  12. Bake in 325 oven for 25 minutes, until almost set.

  13. Turn oven off. Take out crusts and run a knife around the edge. Let set in oven for 30 minutes, then move to rack on counter for 30 minutes.
