Satisfying winter faire! Easily modifies to personal choice with varying cheeses added at end.

Recipe Ingredients for Thick Potato Soup

6 strips bacon, diced, cooked
3 lbs potatoes, peeled and diced
1/2 tsp salt
1 cup sour cream
2 tbsp butter
2 cup milk, lowfat
1/2 tsp pepper
4 green onions, chopped
1/2 cup mozzarella cheese, grated

Recipe Directions for Thick Potato Soup

  1. Boil and drain, reserving liquid, the potatoes until fork tender.

  2. Mash the potatoes in pot while adding salt, sour cream, butter, milk, pepper and bacon.

  3. Heat through adding ladles of the reserved potato liquid from boiling as needed to get desired consistency.

  4. Simmer over medium to low heat to meld flavors, about 20 minutes.

  5. Stir in chopped green onion and mozzarella cheese.
