Recipe Ingredients for Thick Kale Stew from Tucker House B&B

3 tbsp. olive oil
1/2 lb. turkey,ground links, cut into slices
1 large onion
8 cloves garlic, minced
4 large potatoes
16 oz. kale, fresh and cut/torn into bite-size
2 quarts chicken stock, low sodium
15 oz. cannellini beans, rinsed and drained
15 oz. tomatoes, diced
1 Salt and pepper to taste

Recipe Directions for Thick Kale Stew from Tucker House B&B

  1. Heat olive oil in a wide, deep, heavy soup pot over medium heat. Add turkey or turkey sausage, sliced or chopped into bite-sized pieces and saute until starting to brown.

  2. Add to pot the onion and garlic and cook until softened and fragrant, about 5 minutes.

  3. Wash and stem kale and slice into slivers; add diced potatoes, beans and kale to the pot. Add chicken stock and increase heat to high in order to bring soup to a boil. Reduce heat; simmer 30 to 45 minutes, or until potatoes are soft.

  4. Use a potato masher or a fork to roughly mash the potatoes and thicken the broth; add tomatoes and season with salt and pepper. Serve steaming hot with southern cornbread or a crusty French bread.
