This is a hearty, stick-to-your-ribs soup with lots of protein and fiber -- and plenty of flavor. Also known as "survivors at sea soup" -- because of the whole green peas added just before finishing.

Recipe Ingredients for Thick as Fog Pea Soup

20 oz green split peas
16 oz frozen peas
7 c chicken stock
4 oz shallots
3 oz carrots
3 oz bacon
1 t salt
1/2 t pepper
3 oz jalapeno pepper
1 c sour cream

Recipe Directions for Thick as Fog Pea Soup

  1. Snip bacon into 1/2" pieces, and fry until crisp in the bottom of your soup pot. Remove from oil and drain on paper towels.

  2. Shred carrot, seed and mince jalapeno, and mince shallots.

  3. Use bacon drippings to saute shallots, shredded carrots, and jalapeno pepper.

  4. Add chicken stock to deglaze the pot, then add split peas and 1 t salt. Bring to a boil and cover -- cook over med-low heat for 1 1/2 hours, stiring occasionally to prevent sticking.

  5. Once the split peas have disolved into the stock, add water sufficient to bring the consistancy to a thickness that will heavily coat a spoon. Add sour cream and again, adjust seasoning and thickness.

  6. Just before serving add thawed frozen green peas and allow the heat to come back to a high simmer.

  7. Serve i deep bowls and garnish witih a sprinkling of paprika.
