Recipe Ingredients for Thick Chocolate Pudding

23 g (1/4 cup) cocoa
3 tablespoons cornstarch (Do not sub whole wheat flour--ick!)
1/8 teaspoon salt
445 g lowfat milk
56 g whole milk
1 teaspoon vanilla extract
8 g (packets) Equal

Recipe Directions for Thick Chocolate Pudding

  1. In a 2-qt. microwave-safe bowl, microwave the milk uncovered on high for 2 minutes. Stir in the cocoa, cornstarch and salt.

  2. Microwave until thickened, stirring every 30-60 seconds, watching closely for expansion to prevent boiling over. Lower power to 30-50% and continue heating for one minute from point of expansion.

  3. Stir in vanilla and Equal. Chill.
