Recipe Ingredients for Thick & Chewy Walnut-Oatmeal Cookies

1/2 cup (1 stick) butter
1/2 cup light brown sugar
1/4 cup applesauce
3/4 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 1/2 cups rolled oats
1/2 cup walnuts, chopped (optional)

Recipe Directions for Thick & Chewy Walnut-Oatmeal Cookies

  1. ** To make this recipe "lighter" & less sweet you can substitute 1/4 cup (or 3T) of honey & 1/4 cup brown sugar

  2. Preheat oven to 350F

  3. In large bowl, beat butter and sugar until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, baking powder, cinnamon, nutmeg and salt; mix well. Add oats & nuts; mix well.

  4. Chill the dough for 30 min in the fridge and then scoop it. If you don't chill they end up slighly less thick.

  5. The cookies should be two inches apart on a parchment-lined baking sheet

  6. Drop dough by rounded tablespoonfuls onto greased cookie sheet.

  7. Bake 10 to 12 minutes or until light golden brown.

  8. They should be golden at the edges but still a little undercooked-looking on top.

  9. Let them sit on the hot baking sheet for five minutes before transferring them to a rack to cool.

  10. Yields: Bakers Dozen (13 cookies)...OR...put inside mini cupcake pan to make 19 cookies @ 123 cal each.
