Vegetable soup thickened with rice and liquidised to a rough texture for a bit of bite.

Recipe Ingredients for Thick Celery Soup

500 grams Celery
200 grams Onion
100 grams Rice
22 grams Stock Cubes
430 grams Milk, skimmed
600 grams water

Recipe Directions for Thick Celery Soup

  1. Chop the celery and the onions add to a pan, with mixed provencal herbs, two stock cubes. the rice and the water.

  2. Bring to the boil reduce heat to a simmer and cook for approx 20 minutes until the veg and rice are soft

  3. Liquidise to desired texture and return to the pan, taste and season with freshly ground black pepper..

  4. Add the skimmed milk and warm through to serve
