Use chicken broth and water and add a chopped chicken breast as a main course or make as recipe says for lunch or a starter.

Recipe Ingredients for Thick Cauliflower Soup

8 cups cauliflower or one meduim head, small flowerettes and chopped stems
300 ml 2% milk
4 tbsp all purpose flour
3 tbsp parmesan cheese
2 tsp salt
1 tsp pepper
1 tsp nutmeg
1 1/2 tbsp butter

Recipe Directions for Thick Cauliflower Soup

  1. Divide cauliflower into small flowerettes and chop the softer part of the main stem. (no need to throw the stem away). Place in medium sauce pan with enough water to almost cover the cauliflower and 1 tsp salt. Boil gently for about 30 minutes or until soft. Lower heat to minimum. DO NOT DRAIN.

  2. Mix 300 ml 2% milk, parmesan cheese and flour until smooth then slowly add the milk mixture to the cauliflower while stiring.

  3. Add 1 tsp salt, pepper, nutmeg and butter, stir in and serve.

  4. For a little more flavor or a little more class, to each serving, you can add a touch of fresh ground pepper, a pinch of grated cheese, a shake of parmesan, a pinch of chopped green onions, a shake of nutmeg or anything that suits your taste.

  5. Im sure this can be made even healthier by using a butter sub, skim milk or less salt. Its all a matter of taste.
