Very thin, dry bagel covered in sesame seeds, originating from Thessaloniki, Greece.

Recipe Ingredients for Thessaloniki type Sesame Bagel

1 1/2 tsp dry yeast
2 1/2 cups warm water
1 kg flour
1/3 cup sugar
1/4 cup sunflower oil
2 tsp salt
300 g sesame seeds

Recipe Directions for Thessaloniki type Sesame Bagel

  1. Disolve half of the yeast in 1/2 cup warm water, add 2-3 tbsp flour so that it turns pulpy, then cover and leave to stand for 24 hrs somewhere warm.

  2. Just before you start kneading, disolve the rest of the yeast in 1/2 cup warm water, add 2-3 tbsp flour and leave to stand for 15 mins and puff up.

  3. Sift 3/4 of the flour along with the salt into a large bowl, then form a hole at the center. Add the sugar, the oil, both yeast parts and the remaining water in the hole.

  4. Start kneading, adding as much flour as is needed so that you get a tight and supple dough.

  5. Cover the bowl and let the dough stand in a warm place until it doubles in volume.

  6. Once that has happened, press the dough so that it deflates and knead for 5 mins.

  7. Take bits of dough the size of a small orange and form them into longish cylinders. Dip each one into a bowl of water, then roll into the sesame seeds so that they are covered in sesame. Unite the two ends to form O shapes and arrange them on a flat pan lined with baking paper.

  8. Bake at 220C (428F) for 10-15 mins, until they are golden on the outside and soft on the inside.

  9. Serve warm. The remaining ones can be stored in the freezer for months.
