Recipe Ingredients for Thanksgiving Mashed Potatoes

2 cloves garlic, roasted
1 2/3 cups (or more as needed) Chicken Broth
3 pounds potatoes (9 medium)
3/4 cup milk
1/2 cup heavy cream
1/2 cup butter
1 teaspoon salt
1/8 teaspoon black pepper
2 tbsp chopped chives

Recipe Directions for Thanksgiving Mashed Potatoes

  1. Cut off top of garlic bulb. Drizzle with about 2 Tbsp. of broth. Wrap in aluminum foil and bake at 350F for 1 hour or until softened.

  2. Scrub potatoes. Leave skins on, if desired, or peel thinly and remove eyes. Cut into large pieces.

  3. A: Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan; add potato pieces. Cover and heat to boiling; reduce heat. Cook covered 20 to 25 minutes or until tender; drain. Shake pan gently over low heat to dry potatoes.

  4. B: Place broth and potatoes in saucepan. Heat to a boil. Cover and cook over medium heat 10 minutes or until tender. Drain, reserving 1 cups of broth.

  5. Heat milk, whipping cream, butter, salt and pepper in 1-quart saucepan over medium-low heat, stirring occasionally, until butter is melted. Measure out cup of the milk mixture; cover and refrigerate.

  6. Add 2 or 3 cloves of the roasted garlic and chopped chives. Add remaining milk mixture (AND BROTH) in small amounts to potatoes in medium bowl, mashing with potato masher after each addition. (Amount of milk/liquid needed to make potatoes smooth and fluffy depends on kind of potatoes used.) Beat vigorously until potatoes are light and fluffy.

  7. (Spray casserole and bake>) Spray Crock*Pot with cooking spray and spoon in potatoes. Pour reserved milk mixture over potatoes. Bake uncovered 40 to 45 minutes or until hot. Stir before serving. Heat in Crock*Pot.
