Recipe Ingredients for Thai Yellow Vegetable Curry

28 oz Lite Coconut Milk
1/2 tsp fenugreek
1 tsp coriander seeds
1/4 cup green chili
1 tbsp ground cumin
1/2 tsp turmeric
11 g ginger
1/2 cup onion
3 tbsp Fish Sauce
1 tsp soy sauce
1 cup fresh coriander
2 tbsp brown sugar
19 g lime juice
3 cups napa cabbage
3 cups mushrooms
228 g carrots
3 cups baby spinach
2 cups broccoli
2 cups cauliflower
1 cup fresh basil

Recipe Directions for Thai Yellow Vegetable Curry

  1. take 1/2 can lite coconut and item 2-13 on list and blend them in a blender until you get a paste.

  2. put paste in large wok sprayed with Pam, stir-fry for a 2 minutes.

  3. add other 1/2 can of lite coconut milk and stir.

  4. add carrots, mushrooms, and cauliflower and bring to a simmering boil. Turn heat down to medium and cover/cook for 5 minutes.

  5. add second can of lite coconut milk. Cook for 2 minutes.

  6. Add broccoli, and napa cabbage, stir well and cook for another 2 minutes until the broccoli has turned bright green and cabbage has softened.

  7. Remove from heat. Taste, adjust with brown sugar and/or fish sauce or soy sauce to taste.

  8. sprinkle with fresh holy basil and serve with rice (brown basmati :) ).
