Recipe Ingredients for Thai Yellow Curry

1000 grams Coconut Milk
1 cup Chicken Broth
8 oz Fresh Boneless Skinless Chicken Breasts
2 potato small (1-3/4" to 2-1/4" dia) Potatoes, Red, Flesh And Skin
3 tbsp Yellow Curry Paste
1 cup, chopped Onions
1.5 tbsp Fish Sauce

Recipe Directions for Thai Yellow Curry

  1. Dissolve 3 tbsp of curry paste in a little coconut milk. When it's blended, add the rest of the coconut milk.

  2. Taste and add fish sauce as needed, as well as coriander and cumin, if desired.

  3. Add chicken, potatoes, and onions. Stir occasionally to separate the chicken pieces and ensure even cooking.

  4. Bring to a light boil. Reduce heat and cover for 30 minutes, or until potatoes are soft. Serve with rice.
