Thicker than most traditional currys. Great texture with using chunky peanut butter. A must try for peanut butter lovers!

Recipe Ingredients for Thai yellow curry

3 cups chopped brocoli
3 cups frozen green beans
1 orange bell pepper
1/2 small onion
1/4 cup reduced fat peanut butter
3 tbs fish sauce
6 tbs curry powder, yellow
3 tsp lemon juice
1 tbs sweet chili sauce
12 oz beef roast
1 tbs peanut oil
6 3/4 oz coconut milk

Recipe Directions for Thai yellow curry

  1. brown beef in peanut oil and reserve juices set aside

  2. in large pan heat coconut milk till simmering add lemon juice, curry, fish sauce, peanut butter, and sweet chili. Simmer for atleast 10min (the longer the simmer the more intense the flavors)

  3. Add in veggies and continue to simmer for 5 min

  4. Add beef and reserved juices and simmer till all is warmed thru but not soggy!!

  5. Serve with rice
