Recipe Ingredients for Thai Wings

3 lb chicken wings (48 wingettes?)
1/4 cup soy sauce
2 tsp vegetable oil
2 tbsp lime juice
2 tbsp minced cilantro
2 cloves garlic, minced
4 tsp sugar
1/2 tsp ground cumin
1 tbsp lemon zest (grated peel of one lemon)

Recipe Directions for Thai Wings

  1. Put wings in a zipper-style plastic bag. Mix remaining ingredients and pour over wings. Close bag, squeezing as much of the air out as possible. Turn bag so that marinade coats all the wings. Refrigerate overnight.

  2. Preheat oven to 450F. Put wings on a rack in a pan. Throw out the marinade.

  3. Bake for 15 - 20 minutes per side or until chicken is no longer pink inside.

  4. Serve with peanut sauce (available in most stores) for dipping. Makes about 12 appetizer servings.
