Thai vegetables and tofu in coconut curry

Recipe Ingredients for Thai vegetables and tofu in coconut curry sauce

1 cup cauliflower
1 1/2 cup carrots
1/2 red onion
1 red pepper
1 yellow pepper
1/2 cup green beans
2 cups water
3/4 cup tofu, cubed
1 tsp olive oil
1 cup coconut milk
1 cup tomato sauce
2 tbsp fresh basil
2 tbsp fresh cilantro
2 tbsp lime juice
2 tbsp red curry paste
1 1/2 cup jasmine rice

Recipe Directions for Thai vegetables and tofu in coconut curry sauce

Stir-fry vegetables in a little bit of olive oil. Add 2 cups water, tomato sauce and the coconut milk and the fresh herbs. Simmer 30 minutes. Prepare jasmine rice; serve with fresh cilantro and basil, Thai basil if you have some.
