Recipe Ingredients for Thai Tofu Vegetable Soup with Rice Noodles

8 c vegetable or chicken broth
1/2 tsp ground ginger
1/2 tsp garlic powder
1 Lime (38 g) Juice (lime+yields)
2 tbsp. reduced sodium soy sauce
2 red pepper (sliced)
4 large carrot (julienned)
16 oz portabella mushrooms (quartered)
2 packages lite firm tofu
1 tsp. olive oil
2 head bok choy
1 salt and pepper to taste

Recipe Directions for Thai Tofu Vegetable Soup with Rice Noodles

  1. On the stove, heat a medium-sized pot to medium-high. Add stock, garlic, ginger, lime juice and soy sauce. Bring to a boil, and then reduce heat to medium-low.

  2. Add pepper, carrot and mushrooms to stock, and simmer until softened, about 7 minutes.

  3. While vegetables are simmering, slice each package of tofu into 8 slices, for a total of 16 slices. Heat a large skillet to medium high. Add half teaspoon of the olive oil and sear 8 slices of tofu (about 2 minutes on each side). Remove seared tofu slices and repeat with remaining oil and tofu. Portion 4 slices of tofu into each of 4 bowls.

  4. When the vegetables are finished simmering, carefully remove them from the broth with a slotted spoon. Divide the vegetables among the bowls.

  5. Add the rice noodles to the broth. Cook the noodles in broth according to the directions on the noodle package.

  6. When noodles are done cooking, portion the noodles and into the bowls, and cover with stock. Serve and enjoy.
