Recipe Ingredients for Thai Tofu spread

8 ounces firm tofu, grated
1/4 cup carrot, grated
1/2 teaspoon garlic, minced
2 tablespoons red onion, minced
2 tablespoons cilantro, chopped fine
1/4 cup smooth peanut butter
1/4 teaspoon lime zest
1/4 teaspoon cayenne pepper
2 tablespoons fresh lime juice (one lime)
1 tablespoon soy sauce

Recipe Directions for Thai Tofu spread

  1. Combine tofu, carrot, garlic, onion and cilantro in a mixing bowl.

  2. In a separate bowl, blend until smooth peanut butter, lime zest, cayenne pepper, lime juice and tamari.

  3. Fold into tofu mixture.

  4. Store refrigerated
